$graph->set_x_label_font( "Courier New", 11 );
$graph->set_y_axis_font( "Courier New", 9 );
$graph->set_y_label_font( "Courier New", 11 );

とかで、無事フォントが表示されますた。
日本語は utf8 に変換して

$graph->set_title_font( "msgothic.ttc", 16 );

でＯＫですた。
