ちゃんと書いてあるよ。

     -s   Removes all symbolic debugging information from the
          output object file. This option is passed to ld(1).
          This option cannot be specified with -g.

gcc 場合、マニュアルには確かにないねえ。
しかし gcc の info を見ると実は書いてある。
