今、CentOSでremiからPHP 5.5をインストールしてみたら（ここ参照：http://qiita.com/pakiln/items/bcddcdd96e94dab96873 )
opcacheはデフォルトではインストールされなかった。

# yum --enablerepo=remi-php55 install php
# php -v
PHP 5.5.5 (cli) (built: Oct 27 2013 13:14:07)
Copyright (c) 1997-2013 The PHP Group
Zend Engine v2.5.0, Copyright (c) 1998-2013 Zend Technologies

で、php-opcacheを別途インストールしたらこうなった。
# yum --enablerepo=remi-php55 install php-opcache
# php -v
PHP 5.5.5 (cli) (built: Oct 27 2013 13:14:07)
Copyright (c) 1997-2013 The PHP Group
Zend Engine v2.5.0, Copyright (c) 1998-2013 Zend Technologies
with Zend OPcache v7.0.3-dev, Copyright (c) 1999-2013, by Zend Technologies

/etc/php.d/opcache.confのデフォルトの内容はこう。デフォルト有効。
; Determines if Zend OPCache is enabled
opcache.enable=1

; Determines if Zend OPCache is enabled for the CLI version of PHP
;opcache.enable_cli=0
